  • Cauliflower
  • Broccoli
  • Salt
  • Pepper
  • Garlic powder
  • Olive oil
  • Pumpkin seeds
  • Tahini
  • Dijon mustard
  • Maple syrup
  • One lemon
  • Quinoa
  • Arugula

Instructions:

  • Roast the cauliflower and broccoli at 400 degrees for 25-30 minutes, seasoned with olive oil, salt, pepper, and garlic powder.
  • On a plate, combine arugula, the roasted veggies, and quinoa.
  • Sprinkle with extra salt and pepper. For the dressing, mix the juice of one lemon, 3-4 tablespoons of tahini, a dash of maple syrup, salt, pepper, and 1-2 teaspoons of Dijon mustard in a glass jar or container and shake well.
