This bread is absolutely divine! I bake it every week for our family to savor. It's a delightful treat that I'm thrilled to share with my toddler. Loaded with protein, free from added sugars, rich in omega-3s, and high in fiber, it's also anti-inflammatory, so your digestive system will appreciate it. Enjoy it as a dessert or paired with coffee in the morning.
Ingredients:
- 1 cup of almond flour (Use 1/2 cup more if no protein powder or flaxseed)
- 2 tablespoons of vanilla protein powder (I personally recommend Truvani for its clean ingredients)
- 1 tablespoon of flaxseed meal
- 1/2 cup of coconut oil
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 4 ripe bananas
- 2 tablespoons of vanilla extract
- 1 teaspoon of cinnamon
- 1 tablespoon of chia seeds
- 1/4 cup of chopped walnuts (optional)
Extra add-ins:
- Dates
- Raisins
- Chocolate chips
- Maple syrup or Honey for more sweetness
- Layer of brown sugar on the top before baking
Directions:
- In a bowl, mash the bananas using a potato masher or fork.
- Melt the coconut oil in the microwave.
- Combine all the ingredients in the bowl, mix well, and pour the mixture into a cast iron bread pan.
- Bake for 40-43 minutes, until the top forms a slight crust.
- Allow to cool for 10 minutes; the interior will remain soft.
